Fennel Salad with Apples and Goat Cheese Dressing Jawns I Cooked

In my research I found that fennel pairs well with watermelon, and red onion, lemon and feta work well with fennel. Since the watermelon would be grilled I thought I'd grill all of the main ingredients, and that's exactly what you see here. This didn't last long, and the ladies of the house told me to put it on the "Make That Again!" list.

Assemble the salad: In a large bowl gently toss arugula with half the vinaigrette. Place dressed greens on plate and top with fennel and watermelon. Drizzle with remaining vinaigrette and scatter olives and pistachios over top. Garnish with reserved fennel fronds and finish with additional pinch of salt or pepper to taste.

In a small bowl or large measuring cup, whisk together the olive oil, lime juice, honey, salt, and pepper. To a large serving bowl, add the watermelon, edamame, mint, and drained red onion. METHOD. In a small bowl, mix together the goat's cheese and yoghurt until smooth and combined. Combine the lemon juice and olive oil in a large bowl.
